摘要 目的探讨研究不同pH、温度和光照条件对栀子黄色素稳定性的影响。方法以栀子黄色素为材料,色素损失率为表征指标,改变栀子黄色素所处pH、温度和光照条件,通过紫外可见分光光度计对处理后的栀子黄色素溶液进行全波长扫描,计算栀子黄色素色素损失率。试验所得数据通过Excel软件进行统计分析,使用LSD和SPPSS19.0对时间结果进行多重比较、显著性分析和方差分析。结果pH在5-9范围内栀子黄色素色素损失率低于10%,中性和碱性条件下溶液呈本色,其中碱性颜色更为明显,酸性条件下溶液呈橙黄色。随着温度和时间的增加,栀子黄色素色素损失率呈线性上升趋势,温度和处理时间对色素损失率影响显著(P<0.05)。栀子黄色素溶液处于太阳直射光条件下12h后色素损失率达到23.5%,室内自然光和避光条件下栀子黄色素色素损失率在9.7%左右,色素损失率较低;时间和太阳光直射对栀子黄色素色素损失的影响显著(P<0.05)。结论藏花素和藏花酸化学稳定性相对较差,长时间处于高温条件下将会加快其分解,继而栀子黄色素稳定性降低;相比酸性条件,碱性条件更有利于栀子黄色素的稳定性和颜色保存;太阳光直射直接影响栀子黄色素的稳定性。因此在栀子黄色素实际提取生产、运输、应用中须控制适宜温度、弱碱性、避光等条件,以保证栀子黄色素的稳定性和颜色保真。 Objective To investigate the effects of common oxidants,reducing agents and metal ions on the stability of gardenia yellow pigment.Methods gardenia yellow pigment was used as the material,and the loss rate of gardenia yellow pigment was used as the characterization index.The common oxidants,reducing agents and their concentrations in different foods were changed,and the kinds of metal ions were changed.The treated gardenia yellow solution was scanned by UV-Vis spectrophotometer to calculate the loss rate of gardenia yellow pigment.The data were statistically analyzed by Excel software.LSD and sppss19.0 were used for multiple comparison,significance analysis and variance analysis.Result In the pH range of 5-9,the loss rate of gardenia yellow pigment was less than 10%.The solution was natural color under neutral and alkaline conditions,and the alkaline color was more obvious,and the solution was orange yellow under acidic conditions.With the increase of temperature and time,the loss rate of gardenia yellow pigment increased linearly.Temperature and treatment time had significant effects on the loss rate(P<0.05).The pigment loss rate of gardenia yellow solution reached 23.5%after 12 h under direct sunlight.The loss rate of gardenia yellow pigment was about 9.7%under indoor natural light and dark conditions.The effect of time and direct sunlight on Gardenia yellow pigment loss was significant(P<0.05).Conclusion The chemical stability of safflower and safflower acid is relatively poor,and the decomposition will be accelerated under high temperature for a long time,and then the stability of gardenia yellow will be reduced;compared with acid conditions,alkaline conditions are more favorable for the stability and color preservation of gardenia yellow;direct sunlight directly affects the stability of gardenia yellow.Therefore,in the actual extraction,transportation and application of gardenia yellow,the suitable temperature,weak alkalinity and light avoidance conditions should be controlled to ensure the stability and col
