茶籽油微胶囊的制备及其产品特性研究

摘要 采用喷雾干燥法制备茶籽油微胶囊粉末油脂,并对产品配方和喷雾干燥工艺参数进行优化,同时系统分析产品的理化性质、稳定性和体外释放特性。结果表明,最佳配方为麦芽糊精/大豆分离蛋白/阿拉伯胶质量比为1∶1.5∶1.5,芯材/壁材质量比为1∶1.5,乳化液固形物质量分数为20%;喷雾干燥加热温度为180℃,进料泵速25 r/min,雾化压力为0.025 MPa。茶籽油微胶囊包埋率为89.43%,产品具有较高的氧化稳定性。体外模拟消化实验数据显示,该产品主要在肠液中释放,最终释放率为94.03%。 In this study,the microencapsulated seed oil was prepared by spray-drying method,the product formula and spray-drying parameters were optimized,at the same time,the product stability and in vitro digestion properties were also evaluated.The optimum conditions were as followed:maltodextrin/soy protein isolate/acacia gum was 1∶1.5∶1.5,the core/wall ratio was 1∶1.5,the emulsion solid content was 20%,the heating temperature of spray-drying was 180℃,the feed pump speed was 25 r/min,and the atomization pressure was 0.025 MPa.The embedding rate of microcapsule product was 89.43%,and the product demonstrated quite high oxidation stability in the accelerated oxidation test.Simulating in vitro digestion data illustrated that the product was mainly released insuccus entericus and the final release rate was 94.03%.The results of this test could provide a theoretical basis and a new technical approach for the high-value use of Camellia seed oil.
