摘要
为研究市售坚果脂肪酸的组成和营养价值,以18种市售坚果为原料,采用干柱法对其油脂含量进行测定,并通过气相色谱-质谱法对坚果油脂的脂肪酸组成进行分析和营养评价。结果表明:18种市售坚果种仁富含油脂,油脂质量分数为43.15%~63.70%;脂肪酸以油酸(8.05%~84.60%)和亚油酸(1.27%~76.23%)等不饱和脂肪酸为主,且两者占总脂肪酸质量分数的58.22%~94.74%;脂肪酸致动脉粥样硬化指数(AI)和血栓形成指数(TI)较低,分别为0.04~0.20和0.10~0.69。经聚类分析,在距离尺度为7时可将18种市售坚果分为5类,且山核桃和薄壳山核桃、巴旦木和杏仁、开心果和花生、象牙松籽和南瓜籽的脂肪酸组成相似。本研究为市售坚果的脂肪酸组成分析、营养评价以及选购和膳食搭配提供了参考依据。
To study the fatty acid compositions and nutrition evaluations of commercial nuts,the oil contents of eighteen commercial nuts were analyzed by the dry column method,and the fatty acid compositions were also detected by gas chromatography-mass spectrometry(GC-MS)in this paper.The experimental results indicated that the oil components were abundant in eighteen commercial nuts,and the oil contents were 43.15%~63.70%.Oleic acid(8.05%~84.60%)and linoleic acid(1.27%~76.23%)were the predominant fattyacidsand the total contents of both accounted for 58.22%~94.74%of total fatty acids.Meanwhile,significant differences existed in the contents of oleic acid and linoleic acid of eighteen commercial nuts(P<0.05).Moreover,atherogenic index(AI)and thrombogenic index(TI)were relatively low,0.04~0.20 and 0.10~0.69,respectively.Additionally,eighteen commercial nuts could be divided into five groups when the distance scale was seven in the clustering dendrogram.The fatty acid compositions were similar between Carya cathayensis seed and Carya illinoinensis seed,Amygdalus communis seed and Prunus dulcis seed,Pistacia vera seed and Arachis hypogaea seed,Pinus gerardiana seed and Cucurbita moschata seed.This research provided a theoretical basis for fatty acid composition analysis,nutritional evaluation,selective purchasing and diet collocation for commercial nuts.
