巨大口蘑提取物抑菌作用及其保鲜效果研究

摘要 以巨大口蘑为研究对象,采用乙醇、石油醚、乙酸乙酯和甲醇4种不同的提取溶剂对巨大口蘑子实体进行提取,再用采用Kirby Baue纸片扩散法测定抑制圈直径,并初步探讨其提取物对番茄的保鲜效果。结果表明,巨大口蘑乙醇提取物对枯草芽孢杆菌抑菌圈可达到9.2 mm,乙酸乙酯提取物对黑曲霉的抑菌圈为8.4 mm;涂膜保鲜结果表明,4种提取液对番茄储存过程中的失重率、坏果率和感官评分都有所改善,其中乙醇提取液24 d坏果率为30%,而空白对照的坏果率为70%。表明巨大口蘑提取物具有一定的抑菌作用和保鲜效果,为其天然防腐保鲜剂的开发提供了理论支撑。 To investigate antibacterial activity of the extract from Tricholoma giganteum,the diameter of inhibition zone was detected by Kirby Baue micro dilution methods and the applications of the extractions were investigated.The results showed that the ethanol extract owned the strongest inhibitory action on Bacillus subtilis(the diameter of inhibition zone was 9.2 mm)and the diameter of inhibition zone of ethyl acetate extract on Aspergillus niger was 8.4 mm.The film preservation experiment results showed that the four kinds of the extractions are good for the losing weight ratio,bad fruit rate and the sensory score.The bad fruit rate of the ethanol extract on 24 d was 30%,which was 70%of blank control.The extractions from Tricholoma giganteum showed certain antibacterial effects and preservation effect.
