高阻隔性玉米醇溶蛋白膜在调料包中的应用研究

摘要 阻隔性能是食品包装膜的重要性能之一,以柠檬酸和甘油复合增塑在不同条件下制备的玉米醇溶蛋白膜分别具有较好的阻湿、阻油和阻气性能。制备了低吸湿膜、高阻湿膜和高阻油膜3种玉米醇溶蛋白膜,分别进行吸湿性、阻水性和阻油性的测定,并制成包装袋用于调料粉和植物油的包装应用试验。结果表明:在这3种蛋白膜中,低吸湿膜的吸湿率最低,为(1.81±0.19)%,高阻湿膜的水蒸气透过率最低,为(7.58±0.78) g·mm·m-2·d-1·kPa-1,高阻油膜的透油系数最低,为(0.435±0.030) g·mm·m-2·d-1;储藏至第135天时,低吸湿膜和高阻湿膜调料包的质量变化较小,其所含的调料粉水分含量较低;高阻油膜制备的油包质量变化最小,且3种蛋白膜油包均无明显漏油现象;油包内油的酸价和过氧化值最大值分别为0.44 mg/g和2.76 mmol/kg,符合国家标准。说明玉米醇溶蛋白膜有较好的阻湿性、阻油性和阻气性,具备作为方便面调料包和油包包装材料的可能性。 Barrier property is one of the most important properties for food packaging materials,and high barrier packaging materials can delay food spoilage due to the prevention of moisture and oxygen in the environment. The zein films plasticized by citric acid and glycerol have better resistance to moisture and gas.In this study,low hygroscopic films,high moisture resistance films and high oil resistance films were prepared and used for packaging application test of seasoning powder and soybean oil,and the storage stability of three films was discussed by studying the mass change of the packaging and the quality change of the flavoring and oil packed by films. The rate of moisture absorption of three films were in this order: high oil resistance film>high moisture resistance film>low hygroscopic film,and the water vapor permeability of films were in this order: high oil resistance film>low hygroscopic film>high moisture resistance film. Therefore,low hygroscopic film and high moisture resistance film had better moisture resistance. The results showed that high oil resistance film had the best oil resistance properties in three films. The packaging made of three films was stored at room temperature and RH32%. On 135 days,the mass of low hygroscopic film and high moisture resistance film did not change significantly,and the moisture content of their flavorings powder was( 8. 25±0. 16) % and( 8. 17±0. 31) %,respectively,and the values were lower than that of high oil resistance film;the mass of oil package prepared by high resistance film did not change significantly,and there was no obvious oil leakage in all three oil packages. The maximum of acid value and peroxide value of oil were 0. 44 mg/g and 2. 76 mmol/kg,respectively. All of the values were higher than those of the oil in the plastic film,but still lower than the national standard.
